#Whole30 Month 4 Week 4 #paleo Meal Ideas

Week # 16 of eating healthy, the #paleo way. Fruity moothie: 1 frozen banana, couple chunks of pineaple, 4 blackberries, 2 strawberries, a little bit of pomegranate blueberry juice (100% juice, no sugar, syrups, sweeteners or any other crap) My dad brought me a container of shredded meat that he had cooked with cumin, olives, garlic, red yellow and green peppers and onions. It was frozen so I defrosted it, added a couple of carrots to it and some of the left over meat sauce. Added some water to it and simmered till carrots were almost done then added a chopped yellow squash. Beef,carrots and yellow squash mixture over lettuce. Hungry? Reach for the veggies. Steamed broccoli, cauliflower, carrots and avocado. Salt and pepper to taste. Mmmm. The hubby made me a two egg omelette this morning Sautéed baby chard, baby bok Choy, baby spinach, peppers: red, green and yellow, mushrooms with a little bit of olive oil. Week #15 of #Whole 30 I Had a good workout and my abs were still sore from the day before and the one before that. I was hungry so I made myself a green plantain, sliced and cooked with a bit of olive oil, then I warmed up some roast beef in the same pan. That did the trick. Ground beef with zucchini and yellow squash with a side of cucumbers drizzled with lemon juice, vinegar and salt. Super Quick. Sept 11 For a quick meal before workout  I had bacon and 2 eggs fried over well, rolled them up in lettuce leaves. Post workout snack  was an apple with almond butter "sandwich". Cooked some ripe plantains to have with the meat sauce later. I made meat sauce for the kids and hubby's spaguetti. I always reserve a bowl of it for myself so I can add it to veggies or eggs.  It tasted really good on lettuce too.    

#Whole30 month #4 Week #1

I have started my 4th month in a row of #Whole30. Below are the meals I came up with this week. Enjoy! I cooked some beef chunks and then used the beef juice to cook some shredded zucchini and grated carrots. I made lettuce wraps with it. Iceberg lettuce, spinach, vine ripe tomato, olives, left over beef shredded, drizzled with coconut oil, lime juice, salt an pepper My version of a chocolate shake, the #Paleo way. It's got a frozen banana, a spoon full of 100% cocoa powder (no dairy, no sweeteners, just pure cocoa), a medium size kale leaf, a handful of spinach leaves. Filled halfway with PureAlmond unsweetened vanilla Silk almond milk (no sweeteners, no carrageenan). Always read your labels, there's almond and coconut milk out there that have carrageenan, added sugar etc, same goes for cocoa. I finished filling it up to the max Line with water, so as far as the liquid is concerned it was half water half almond milk. Angus choice roast beef...

 Where has time gone. I have completed 12 weeks of Whole30 so far.  I can't believe I have been grain, dairy, legume and sugar free for this long, but where there is a will there is a way. I'm feeling great and fit. Here are the meals I came up with this past week. Bacon, eggs and Yuca. Heated up the Yuca in the pan to char the outside a little, cooked the two eggs with tomato sauce. Steak, Spaghetti squash w/ sauce, yuca w/ garlic, lime juice and evoo and broccoli with a tablespoon of homemade mayo for dipping. The hubby made me bacon and eggs :-) Tuna lettuce wraps. Tuna with homemade mayo, mustard, salt, pepper and raisins. Rolled up in two overlapping lettuce leaves. Baked curry chicken breast, broccoli, yuca, leftover spaghetti squash and homemade mayo for dipping. Ham, tomato, spinach and eggs for a filling breakfast. Got home from the Gym hungry so I fixed this plate with left over baked curry chicken, cold, right out ...

Week #4 of my second round of Whole30 is over. I've had a crazy busy week but finally here's the weeks' recipes. Sausage with eggs and ripe plantains. Mid afternoon pick me up. Spinach, celery stalk, apple, grapes. More plantain for breakfast this morning, I've got quite a few ripe ones that need to be cooked this week! Also made sausage and eggs with Mrs Dash original seasoning and a little bit of hot sauce. Getting ready to chop and dice these wonderful veggies and cook them in homemade meat sauce. 2 Zucchini, 1/4 butternut squash, 2 celery stalks, 2 radishes, one medium onion cooked in meat sauce. Left over veggies topped with tilapia seasoned with Mrs Dash original seasoning. 1green plantain,sliced and cooked in evoo, 1 sweet potato, sliced and cooked in evoo, 2 eggs beaten in a mixture of thick ground beef sauce and about 3 table spoons of milled flax seeds.
