Even with the kids grown up into teenagers, life hasn't slowed down a bit! Between work, keeping up with a hectic schedule, and managing daily tasks, I still don't have time for elaborate, hours-long kitchen sessions.

My cooking strategy remains focused on quick, easy assembly meals using whatever wholesome ingredients I happen to have on hand. Breakfast

  • Deconstructed Shakshuka (10 mins): A quick twist on breakfast. Hard-boiled eggs topped with a chunky homemade sauce. Just simmer a chopped large tomato with a teaspoon of garlic, Italian seasonings, and a pinch of red pepper flakes for about 5 minutes, then pour it right over the eggs.





  • Spiced Meat Sauce Salad (5 mins): Warm up leftover homemade meat sauce, scramble it directly into an egg, and serve over a bed of fresh baby spinach. Drizzle with garlic-basil olive oil, a splash of vinegar, salt, and pepper.
